As a quick tip, one of the key points about making a great steak is high heat. If you expose the steak to high heat quickly, you sear it. By searing the steak, you keep the flavor inside. The key point is that if you’re going to cook a steak in the oven, remember that it’s not as high heat as the grill. We recommend that you find a way to sear the steak first. You can do this in a frying pain. You can brush the steak with a little butter or oil. Some people use flour. The goal is to get the frying pan to high heat and then sear the steak on each side for about a minute. If you do that, you’ve successfully “captured” the flavor and can move the steaks to the oven. Because you seared the steak with high heat, you’ll be able to finish it off in the oven.
